If you’re looking for some spice in life, look no further — we’ve got an easy falafel recipe for you made from simple, staple ingredients that you probably already have in your pantry! This spiced middle eastern patty is a yummy and versatile addition to your dinner table, whether wrapped in pita bread, flatbreads, or topped on salads as an appetiser. Formed from a base of chickpeas, spices and flour, it's the perfect reason to gather the kids and have some fun family bonding time while making these patties!

When we think peanut butter, we think breakfast, snack or dessert - but why not switch it up and use peanut butter in a savoury dressing instead? With it’s smooth, thick, and creamy consistency, it makes for a deliciously nutty sauce that can be easily incorporated into salad dressings or as a fun party dip.

Here, Wendy from @happyonionbakes has used our Honestly Smooth Peanut Butter as a substitute for tahini dressing by combining it with some salt, maple syrup and lemon juice for a delightful balance of flavours.

  • 2 cans of chickpeas (15oz can)
  • ¼ red onion
  • 1 handful of fresh parsley
  • 4 cloves garlic
  • 1 tsp of salt
  • ½ tsp cayenne pepper
  • 1 tsp ground cumin
  • 1 tsp baking powder
  • 3 tbsp of plain flour

Rinse chickpeas and drain.

Blend chickpeas with red onion, parsley, salt, cayenne, garlic and cumin until chunky paste is formed, and transfer to bowl.

Stir in baking powder and flour until it is firm enough to form into patties.

Refrigerate for 1 hour

In the meantime, prepare the dressing:

  • 2 tbsp Honestly Smooth Peanut Butter
  • 1.5 tbsp lemon juice
  • 1 tsp maple syrup
  • ½ tsp salt
  • 50 ml warm water

Mix Peanut Butter, lemon juice, maple syrup and salt together. Add water slowly, to desired consistency.

Form falafel dough into patties.

Heat oil in skillet until very hot and cook patties on each side until deep golden brown and crispy.

Serve with the peanut butter dressing made and enjoy!
